This is a great go-to salad when you are having company or just a special dinner. When I first read the ingredients, I was skeptical. But it is fabulous. Adjust the amount of sugar for your personal taste. The original recipe called for 1/2 cup, but I used 1/4 cup and it was delicious.
(2) 5-oz packages romaine lettuce
1 cup shredded Swiss cheese
1 cup cashews
1 apple, coarsely chopped
1 pear, coarsely chopped
1/4 cup sweetened, dried cranberries
1/4 cup sugar
1/3 cup lemon juice
2 teaspoons red onion, finely chopped
1 teaspoon salt
2/3 cup extra virgin olive oil
1 T poppy seed
Combine sugar, lemon juice, onion and salt in a blender container; cover and blend well. While blender is running, add oil in a slow, steady stream; blend until thick and smooth. Add poppy seed and blend an additional 10 seconds to mix.
