My husband had a stroke over this breakfast sandwich the other morning. I’m personally not a fan of fried eggs, but if you are, this is a very filling and savory breakfast.
Sourdough Breakfast Sandwich
2 slices sourdough bread
2 slices cooked bacon
2 fried eggs, salted and peppered to taste
Put a little bit of butter on one side of each piece of bread and lightly brown in a non stick skillet or a panini press. Fry your eggs however you like them fried. Place eggs on top of the bread as if making a regular sandwich. Top with two slices of bacon and shred your favorite cheese on top. Sprinkle with fresh chives and slice diagonally. Serve with fresh fruit. Makes one sandwich.
