Banana Fiber Muffins

These are healthy and very tasty. I crush the fiber cereal in a freezer zip loc bag with a rolling pin. They freeze well and make a great quick breakfast.


1 cup Fiber One cereal, crushed

1 cup mashed ripe banana (about 2 medium bananas)

2/3 cup low fat plain or vanilla yogurt

1/2 cup pecans or walnuts

1/2 t vanilla

2 T olive oil

2 egg whites (or 1 egg)

1 1/2 cups Bisquick Light

1/2 cup sugar

3 t baking powder

Pinch salt

1/2 t ground cinnamon, if desired

Heat oven to 400 degrees.  Line bottom of muffin pan with paper baking cups or spray muffin tin with non-stick cooking spray.

Mix cereal, yogurt, pecans (or walnuts) and vanilla in medium bowl. Let stand 5 minutes. Beat in oil and egg whites or egg. Mix remaining ingredients; stir into cereal mixture just until moistened. Divide batter evenly among muffin cups. Bake 20 – 25 minutes or until light brown.

Immediately remove from pan. Serve warm. Makes 10 muffins.
