Snackin’ Cake

Snackin' Cake
My mom making the Snackin’ Cake on one of our RV trips. I think this photo was taken right before I came into the RV crying from belly flopping off the community pool high dive. The cake helped.

 

This recipe has been in my family for as long as I can remember.  It’s so moist and so chocolatey.  And so quick!

Ingredients
  • 1 box Duncan Hines Devil's Food Cake Mix my mom got over not using a cake box mix
  • 1/2 cup oil
  • 2 eggs
  • 1 pkg chocolate instant pudding mix 4 serving size
  • 1 cup chocolate chips
  • 1 1/4 cups water

  • 1 cup chocolate chips
  • 1 1/4 cups water

Instructions
  1. Preheat oven to 350 degrees. Pour oil into a 13x9x2 pan.
  2. Tilt the pan until the bottom is covered with oil.
  3. Put remaining ingredients into the pan; stir with a fork or spoon until blended (about 2 minutes).
  4. Scrape sides and spread batter evenly in pan.
  5. Bake for 35-45 minutes; or until toothpick inserted near center comes out clean.
  6. Cooked cake may be sprinkled with powdered sugar.
  7. Use a knife to loosen cake from sides; cut and serve directly from pan.
  8. Try not to eat the whole thing while it's still warm.
  9. Throw in a scoop of vanilla ice cream and you're in business.
