Skinny Buffalo Dip

Good gosh. Where has this healthy snack been my entire life?

Around 4 p.m. (give or take 6 hours) I become ravenous. It’s like I have never eaten my entire life. I found this amazing recipe for buffalo dip (www.fromforkstofitness.com) – I have never clued in to what the “buffalo” part of the dip is, but I have learned it’s the deliciousness of the smoky sauce. I am not a fan of super hot sauce like my husband is, but I do love the Cholula brand of hot sauce – it’s not spicy, but it’s very flavorful. So when I found the chipotle form of Cholula I almost knocked a sweet little lady over in the grocery aisle getting to it.

I am only a greek yogurt fan when it really doesn’t taste like greek yogurt. The tartness of it when it’s totally plain makes me gag. Trust me when I say the greek yogurt in this recipe makes it. Please try this…your waistline at 4 p.m. (or any other time you decide to indulge) will thank you. The recipe below is a serving for one person, unless you want to share, but who wants to do that?

Skinny Buffalo Dip

Ingredients
  • 1/2 cup black beans, rinsed
  • 1/2 cup sweet yellow corn, drained I used a rotisserie chicken
  • 1/4 cup salt (it doesn't sound like a lot but it's enough, I promise)
  • Salted, roasted almonds You can use any other kind of hot sauce you like, and as many shakes of it as you want.
  • 2 ice berg lettuce

Instructions
  1. Skinny Buffalo Dip: Preheat one oven to 350 degrees and another oven to 400 degrees (for the tortilla chips you'll make) Mix the chicken, greek yogurt, half of the cheese and Cholula sauce in a small bowl and transfer to a very small baking dish or a ramekin. Top with remaining cheese. Bake at 350 for 10-15 minutes or until heated through. Corn Tortilla Chips: Spray both sides of each corn tortilla (2) with olive oil spray or canola spray. Sprinkle both sides with seasoned salt. Cut each tortilla into 6 triangles. Bake at 400 degrees for 10 minutes or until the desired crispiness. Also, cut up some celery and finish the dip with that when you run out of the tortilla chips. I personally think celery is best left for animals to eat, but when I eat it with this dip, I like it somewhat...ENJOY!!!
