Oleta’s Sweet Potato Casserole

The second wife of my late grandfather, Oleta, made this sweet potato casserole. It is so easy and delicious and great for Thanksgiving or Christmas. At first I was afraid of using canned sweet potatoes, but after haggling with real sweet potatoes, I threw caution to the wind and used the canned ones. Sadly, I couldn’t tell the difference between the canned and the real ones. If we only eat this one time a year, we won’t die of sugar poisoning.

Oleta's Sweet Potato Casserole

Ingredients
  • 2 large cans sweet potatoes (drained)
  • 1 cup Sugar
  • 1/2 cup softened margarine
  • 4 eggs
  • 1 tsp vanilla
Topping:
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup softened margarine

Topping:
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup softened margarine
Instructions
  1. Mix first 5 ingredients with a hand mix. Combine topping ingredients and sprinkle on top of casserole. Bake at 350 degrees for 30 minutes or until bubbly. I burned the first layer of my tongue off the first time I tried it right out of the oven. Letting it cool some also solidifies all the delicious sugar...
