“Must-Have-Recipe” Salad

Must-Have-Recipe Salad

This is a great go-to salad when you are having company or just a special dinner. When I first read the ingredients, I was skeptical.  But it is fabulous.  Adjust the amount of sugar for your personal taste. The original recipe called for 1/2 cup, but I used 1/4 cup and it was delicious.

Ingredients
Salad:
  • 5-oz packages romaine lettuce 2
  • 1 cup shredded Swiss cheese
  • 1 cup cashews
  • 1 apple coarsely chopped
  • 1 pear coarsely chopped
  • 1/4 cup sweetened dried cranberries
Salad Dressing:
  • 1/4 cup Sugar
  • 1/3 cup lemon juice
  • 2 teaspoons red onion finely chopped
  • 1 teaspoon salt
  • 2/3 cup extra virgin olive oil
  • 1 T poppy seed

  • 1 apple coarsely chopped
  • 1 pear coarsely chopped
  • 1/4 cup sweetened dried cranberries

  • 1/4 cup Sugar
  • 1/3 cup lemon juice
  • 2 teaspoons red onion finely chopped
  • 1 teaspoon salt
  • 2/3 cup extra virgin olive oil
  • 1 T poppy seed
Must-Have-Recipe Salad
Instructions
  1. Combine sugar, lemon juice, onion and salt in a blender container; cover and blend well.  While blender is running, add oil in a slow, steady stream; blend until thick and smooth. Add poppy seed and blend an additional 10 seconds to mix.
