Banana Fiber Muffins

These are healthy and very tasty. I crush the fiber cereal in a freezer Ziploc bag with a rolling pin. They freeze well and make a great quick breakfast.

Banana Fiber Muffins
Servings
10 Muffins
Ingredients
  • 1 cup Fiber One cereal crushed
  • 1 cup mashed ripe banana about 2 medium bananas
  • 2/3 cup low fat plain or vanilla yogurt
  • 1/2 cup pecans or walnuts
  • 1/2 t vanilla
  • 2 T olive oil
  • 2 egg whites or 1 egg
  • 1 1/2 cups Bisquick Light
  • 1/2 cup Sugar
  • 3 t baking powder
  • Pinch salt
  • 1/2 t ground cinnamon if desired

  • 2 T olive oil
  • 2 egg whites or 1 egg
  • 1 1/2 cups Bisquick Light
  • 1/2 cup Sugar
  • 3 t baking powder
  • Pinch salt
  • 1/2 t ground cinnamon if desired
Instructions
  1. Heat oven to 400 degrees.  Line bottom of muffin pan with paper baking cups or spray muffin tin with non-stick cooking spray.
  2. Mix cereal, yogurt, pecans (or walnuts) and vanilla in medium bowl. Let stand 5 minutes. Beat in oil and egg whites or egg. Mix remaining ingredients; stir into cereal mixture just until moistened. Divide batter evenly among muffin cups. Bake 20 - 25 minutes or until light brown.
  3. Immediately remove from pan. Serve warm.
