5-Ingredient Black Bean Soup

It’s almost ridiculous how easy it is to make this soup and how delicious it is. I got this recipe (and above photo) off of the website www.gimmesomeoven.com. I threw a chopped up rotisserie chicken in it and it was a hit.

Ingredients
  • 3 cans black beans with liquid, 15 oz
  • 2.5 cups Herdez salsa
  • 1/2 cup loosely packed chopped cilantro plus extra for garnish
  • 2 tsp. ground cumin
  • 1 clove garlic minced
  • 1 rotisserie chicken chopped

  • 2 tsp. ground cumin

Instructions
  1. Stir all ingredients together in a medium saucepan. Heat over medium-high heat until simmering.
  2. Reduce heat to medium-low and simmer for at least 10 minutes, stirring occasionally.
  3. Serve with chopped cilantro for garnish.
Recipe Notes

I typically double the recipe for the girls and my husband to have for lunches. Serve with beer bread and you're the hero of the night.
