My husband told me to put this on a permanent rotation in my cooking repertoire. It is very flavorful and the kids loved it as well.
2 tsp extra virgin olive oil
1 lb. boneless chicken breast, cut into bite sized pieces
1/4 yellow or red onion, chopped
1 packet Ranch mix
1 red bell pepper, chopped
1 green bell pepper, chopped
1 can black beans, drained and rinsed
1 can fire roasted diced tomatoes
1 1/2 cups instant brown rice
3/4 cup chicken broth
1 cup grated cheddar cheese
Cilantro, for serving
Heat olive oil in large skillet. Add onions and saute until translucent. Add peppers and cook until softened. Add chicken and cook 3-5 minutes. Add all other ingredients, except the cheese. Bring to a boil, reduce heat and simmer. Simmer 20 minutes. Turn heat off, add cheddar cheese and cover until melted.
