It’s almost ridiculous how easy it is to make this soup and how delicious it is. I got this recipe (and above photo) off of the website www.gimmesomeoven.com. I threw a chopped up rotisserie chicken in it and it was a hit.
3 (15 oz) cans black beans, with liquid
2.5 cups Herdez salsa
1/2 cup loosely packed chopped cilantro (plus extra for garnish)
2 tsp. ground cumin
1 clove garlic, minced
1 rotisserie chicken, chopped
Stir all ingredients together in a medium saucepan. Heat over medium-high heat until simmering. Reduce heat to medium-low and simmer for at least 10 minutes, stirring occasionally. Serve with chopped cilantro for garnish. I typically double the recipe for the girls and my husband to have for lunches. Serve with beer bread and you’re the hero of the night.
