Snackin’ Cake

My mom making the Snackin’ Cake on one of our RV trips. I think this photo was taken right before I came into the RV crying from belly flopping off the community pool high dive. The cake helped.

This recipe has been in my family for as long as I can remember.  It’s so moist and so chocolatey.  And so quick!

1 box Duncan Hines Devil’s Food Cake Mix (my mom got over not using a cake box mix)

1/2 cup oil

2 eggs

1 pkg chocolate instant pudding mix (4 serving size)

1 cup chocolate chips

1 1/4 cups water

Preheat oven to 350 degrees.  Pour oil into a 13x9x2 pan.  Tilt the pan until the bottom is covered with oil.  Put remaining ingredients into the pan; stir with a fork or spoon until blended (about 2 minutes).  Scrape sides and spread batter evenly in pan.  Bake for 35-45 minutes; or until toothpick inserted near center comes out clean.  Cooked cake may be sprinkled with powdered sugar.  Use a knife to loosen cake from sides; cut and serve directly from pan.  Try not to eat the whole thing while it’s still warm.  Throw in a scoop of vanilla ice cream and you’re in business.
