Oleta’s Sweet Potato Casserole

Diabetes alert!

The second wife of my late grandfather, Oleta, made this sweet potato casserole. It is so easy and delicious and great for Thanksgiving or Christmas. At first I was afraid of using canned sweet potatoes, but after haggling with real sweet potatoes, I threw caution to the wind and used the canned ones. 2 large cans sweet potatoes (drained)

1 cup sugar

1/2 cup softened margarine

4 eggs

1 tsp vanilla

Topping:

1 cup brown sugar

1/3 cup flour

1/3 cup softened margarine

Mix first 5 ingredients with a hand mix. Combine topping ingredients and sprinkle on top of casserole. Bake at 350 degrees for 30 minutes or until bubbly. I burned the first layer of my tongue off the first time I tried it right out of the oven. Letting it cool some also solidifies all the delicious sugar…
